In a world that increasingly focuses on development, optimization and progress, there is a proportionally increasing tendency for food to lose value due to a downgrading of ecology and general sustainability. Standardized mass production all too often leads to a decrease in quality within elements such as taste, consistency, additives and nutritional quality of the products.
We are experiencing an increasing demand for a difficult combination of quality, experiences and convenience, but we do not see it as a solution to compromise on quality and experiences simply to accommodate convenience.
In the lecture, Nikolaj Kirk questions the state of affairs, preferably with the aim of ensuring that additives are removed from foods and that vitamins return to the center. At the same time, imagination and creativity must be unleashed in cooking again.
